3 | cloves | garlic, thinly sliced | |

1 | tablespoon | butter | |

1 | teaspoon | lime zest | |

2 | tablespoons | lime juice | |

1/4 | teaspoon | ground ginger | |

1/8 | teaspoon | crushed red pepper | |

|
In a large skillet, cook chicken and garlic in hot butter for 8-10 minutes or until chicken is no longer pink, turning once or twice.
In a small bowl, combine lime zest, lime juice, ginger and crushed red pepper. Set aside.
Peel orange. Reserving juice, cut orange in half lengthwise; then cut crosswise into slices. Add any reserved orange juice and the lime juice mixture to skillet.
Place orange slices on top of chicken. Cover and cook for 1-2 minutes or until heated through. To serve, spoon any reserved drippings over the chicken.
Serve over hot rice.
