1/2 | teaspoon | dried Italian seasoning | |

6 | medium red skinned potatoes, scrubbed and cut into wedges (about 2 pounds) | ||

Preheat oven to 425 degrees F
Mix mustard, olive oil, garlic and Italian seasoning in a gallon size, food safe, sealable plastic bag.
Add potato wedges, seal bag and toss until potatoes are covered with the mustard mixture.
Spread potatoes in a single layer on a large baking pan. Roast for 35 minutes or until potatoes are fork tender.
