1/4 | cup | diced green pepper | |

1 | lb. | ground beef | |

1 | can | (28 oz.) diced tomatoes, drained with liquid reserved | |
|
|||
1/4 | teaspoon | thyme | |
|
|||
1 | teaspoon | salt | |
|
|||
1/2 | teaspoon | sugar | |
|
|||
1 | small bay leaf | ||
|
|||
1 1/3 | cups | cooked rice | |
|
Heat large skillet over medium heat. Add onion, green pepper and ground beef. Cook, stirring often, until beef is done; drain. Add enough water to reserved tomato juice to make 1 1/2 cups liquid. Add juice, tomatoes, thyme, salt, sugar and bay leaf to mixture in skillet. Simmer for 5 minutes over medium heat. Stir in rice; cover and simmer 5 more minutes. Discard bay leaf before serving.
