Stuffed baked potatoes are a mealtime favorite!
Yield: 4 servings
4 | baking potatoes | ||

Olive oil | |||
|
|||
1 | California avocado, peeled and pit removed | ||
|
|||
2 | Tablespoons | sour cream | |
|
|||
Salt, to taste | |||
|
|||
Pepper, to taste | |||
|
|||
4 | slices | bacon, crisply cooked and crumbled | |
|
Preheat oven to 400 degrees F
Scrub potatoes, lightly rub with olive oil and prick with fork multiple times to allow steam to escape. Bake for 1 hour or until fork tender.
Mash avocado with fork to chunky texture and mix in sour cream, salt and pepper.
When potatoes are done, cut down the center, spoon avocado mixture over each potato and sprinkle on crumbled bacon.
